VARIETY: Pinot Noir
TASTE AND SENSORY ATTRIBUTES:
Bright, golden yellow color with a rich sparkle of tiny bubbles of carbon dioxide. Aroma is elegant with the onset of tropical fruits and hints of toast in the background. Palate is harmonious and round with nice acidity, notes of peach and yellow melon. Aftertaste reveals roasted almonds with small pieces of dried fruits.
MEAL SUGGESTION:
Rich creamy sauces with forest mushrooms; au gratin vegetables; pasta with seafood, goat cheeses
WINE SERVING: Served at 7-9°C in sparkling wine flute glasses with a volume of 150-190ml;
BOTTLE MATURATION: 1-4 years

Grapes were processed gently and quickly; must fermentation proceeded at low temperatures. After the secondary fermentation, the base wine cuvée along with the tirage liqueur (leaven, sugar and nutrition) matured on yeast for nine months. The defecated sparkling wine was left in its natural form as Extra Brut with less than 4 grams of residual sugar.
