Attractive garnet-red color attracts with a beautiful cherry edge. Aroma is elegant, more mature than flavor. At first impression, it resembles candied cherries blended with dark berries. After opening in the chalice the aroma gets accompanied by a pleasant onset of ripe plums and beetroot, underlined with a hint of thyme and cinnamon, which the wine acquired during its slow maturing in oak barrels. The flavor is delicate, even velvety, endowed with notes of stones fruit and finished with a hint of licorice in fine coffee aftertaste.

TASTE AND SENSORY ATTRIBUTES:

MEAL SUGGESTION:
Lamb shank roasted on root vegetables with natural rosemary sauce, served with red lentils and spinach leaves; soft cottage cheese with white mold and plum chutney

WINE SERVING: Served at 15-17°C in red wine goblets with a volume of 500-650 ml; decanting is recommended to delicately open up the wine´s aromas and flavors

BOTTLE MATURATION: 3-5 years

WINEMAKERS´S DIARY:
Favourable growing conditions and dry warm climate of 2012 allowed us to harvest grapes in the quality of late harvest. After one month of fermentation on the skins, the wine was pressed for free-run and left to mature for 13 months in large 5 000 liter oak barrels. This gave rise to a full and complex wine with a distinctive fruity and pleasant balsam structure.
