TASTE AND SENSORY ATTRIBUTES:
Appealing raspberry pink color hue with a hint of purple. Delicious fruity, even herbal aroma of ripe blueberries macerated in cherry and plum juice with an elegant note of mountain herbs. Palate is creamy-fruit and in harmony with aroma, reminiscent cocktail of freshly squeezed strawberries, cranberries and raspberries with flesh of pink pomelo and rosehip. Aftertaste is light, pleasantly fruity with traces of residual sugar gently fading away.

MEAL SUGGESTION:
Fresh cheese spreads from cow´s and goat´s milk; creamy risotto with chicory and wild mushrooms; valerian salad with honey, pear and Balkan type cheese.

WINE SERVING: Served at 8-10°C in rosé wine tulip shaped goblets with a volume of 340-470 ml;

BOTTLE MATURATION: 1-3 years

WINEMAKERS´S DIARY:
Grapes of MERLOT variety for rosé wine were collected on 28th of September with sugar content 22,5 °NM in Late Harvest quality in the Zoya vineyard. When processing, we have macerated the grapes at 10°C in the press to get a beautiful pink color. Afterwards, cold fermentation followed at 14 °C where we stopped the fermentation process at pleasing 10 g/l residual sugar. Wine has beautiful fruit character full of forrest fruit and fruity palate.
