VARIETY: Viognier

TASTE AND SENSORY ATTRIBUTES: 
Yellow-green hue color, rich foam with bountiful sparkling of carbon dioxide bubbles. Delicate aroma is reminiscent of summer fruits with yellow melon, oranges and tangerine notes. Fresh fruity flavor is dominated by pleasant acidity coated in cream biscuit. Wine´s full bodied aftertaste intertwines with pieces of hazelnut and juicy ripe peel of citrus fruits.

MEAL SUGGESTION:
Aperitif; creamy mushroom soup; poached fillet of sea fish on fennel risotto; creamy cow´s cheese with white mold

WINE SERVING: Served at 7-9°C in sparkling wine flute shaped glasses with a volume of 150-190ml;

BOTTLE MATURATION: 1-4 years

WINEMAKERS´S DIARY:
Grapes were processed gently and quickly; must fermentation proceeded at low temperatures. After the secondary fermentation, the base wine cuvée along with the tirage liqueur (leaven, sugar and nutrition) matured on yeast for nine months. A dosage of 9 grams of residual sugar was added to the purged sparkling wine.
